The History of Truffles

What is it about TRUFFLES that intrigues chefs, home cooks and foodies alike since we ate the first one? We don’t know much about the origin of truffle consumption. We assume pigs with gourmet palates first led man to imbibe on this aromatic treat.

Truffles are a type of fungus that grow underground.  They function as a food storage facility (or fruit) for the parent plant. This delicacy grows among tree roots of certain regions of the world. Edible truffles cannot be easily produced by commercial growers.  They are both elusive and expensive, like the White Perigord Truffle. These “diamonds in the kitchen” cost as much as $1,000 per ounce!

Perhaps you are lucky enough to take a trip to France or Italy in search of this “Diamond of the Kitchen.”  You need the help of a specially trained pig to find this buried treasure.  Your efforts will or will not be rewarded. Pigs have a tendency to eat the truffles they find. And if successful in finding your precious truffle or two, immediate exposure to air and the elements will begin to diminish its delicate essence and aroma.
